| This was a Lenton meal when I was growing up, now we have it anytime.This is the basic brown stew gravy, so you can make this dish with any seafood or meat..Meatball stew or pork stew can be made from this basic recipe. Boiled eggs are a wonderful addtion to this dish. |

| Twenty years ago, being a Mom to Little League baseball players, we were sometimes asked to bring chili for the chili dogs sold as a fund raiser. | Traditionally Cajuns prepared the red beans and sausage then served the beans and sausage over rice which is the way this dish is prepared. This is a different from some fast food chicken places in which the rice is cooked with the bean and sausage mixture. |
