Dawnie's Smothered Pork Chops & Gravy Marissa for Dawn
Most Cajun farm families raised their own source of meat from meat supply from cattle to chickens to pigs and hogs. A "sow" is a female mother pig, a "boar" is a adult male pig, and a "piglet" is a baby pig. A "herd" is a group of pigs.Despite popular belief, pigs are one of the cleanest animals there are; must be why they are such a popular food item.

Shrimp CasseroleMawMaw Ruby's Recipe Box
The word shrimp can often be used interchangeably with the terms "prawn" and "scampi". While scampi generally means cooked shrimp cooked in butter or garlic, prawn refers to the Freshwater Shrimp. Numerous varieties of shrimp exist, among them brown, white, pink, royal red, brine, and rock shrimp. Depending on the species, size ranges from about 1/2 inch long on the west coast of the United States, to almost 12 inches elsewhere.

Donna's Crawfish and Crabmeat CasseroleDonna Langlinais
I made this reciepe from the top of my head one day. I guess I was bored. I am still trying different ways to cook it. You may also add shrimp to it. You can also double the recipe. Play around with it. This is by far a healthy diet meal, but oh so good. Enjoy making it and eating it.
Crawfish and Eggplant w/Angel Hair PastaTessie Duhon
Angel hair pasta in Italian is described as this long delicate noodle called capelli d'angelo. Angel hair pasta should be served with light, delicate sauces. This recipe sure fits the bill as this dish is just heavenly.
Crawfish CasseroleIn Memory of Elaine Z. Leger - a beautiful Cajun Lady
A combination casserole of meat and seafood - from the oven to the table. This is one of the easiest no fail recipes for dressing. The flavor is incredible. As with any recipe that contains crawfish, shrimp maybe substituted, You could even mix the two and add crab meat.

Brenda Campbell's Fried ShrimpBrenda Campbell
MawMaw was invited to a send off party for one of her friends who had come in from Pittsburgh. The hostess Elaine, invited her good friend Brenda to this party cuz she knew how to fry shrimp. Yes Brenda knows this..... I will agree these fried shrimp are as good and tasty as any restaurant fried shrimp. Lookout - my Fry Daddy is coming out!
Big Mamma's Sunday GumboHeather
The secret to this gumbo is the ROUX!!! Always use warm to hot water to dissolve the roux. While you're at it, make enough as it keeps well in or out of the refrigerator.
Shrimp StuffingTina Dubois
Use this stuffing to stuff vegetables, squash, mushrooms or bake as a casserole in a baked pie shell. Maw-Maw got this recipe from getting together with a classmate at a recent class renion. Class reunions: renewing friendships, sharing a lifetime of memories, finding out all the fun things and idiot things you forgot you did and most importantly sharing the love and comaraderie of your fellow classmates - a connection that is absolutely priceless! In honor to the Class of '66!
