If you have been to Menard's Restaurant in Erath, Louisiana, you would know that he made one of the best rice dressings around. This recipe smells and taste much like his. Although the restaurant is no longer around, at least you can still enjoy that flavorful rice dressing. In getting this recipe I found that a good Cajun cooks' secret to a good rice dressing is using ground pork as the main ingredient in lieu of grond beef.

Most people now realize that okra and the word "gumbo", which means okra in some parts of Africa, mean the same thing. Not to be confused with the gumbo type soup that Cajuns have become well-known for. So this means that you can make a gumbo of gumbo. Have you confused? That is ok...what I will give you here is an easy way and non-tiring way to cook okra and then to make an okra gumbo.

Anyone who thinks frogs are just for little kids to put in their pockets and play with, have never eaten fried frog legs or frog sauce piquant. In this dish most cajuns will use the head and body carcuss for the sauce piquant and save the legs for frying. Most people think frogs taste like chicken......I say it taste even better than chicken. Speaking of which, as the recipes notes you can use use instead of frog meat, chicken or catfish. Both are totally wonderful in this dish. This recipe came out of The Tobasco Brand Cookbook that I bought at a half-price bookstore. I could not figure out why they wanted to get rid of it. Oh well, Lucky Me!

This recipe is from an old-time farmer who never let a turtle get by. If he was traveling along the road checking his crop or Sunday driving, you best believe he would stop his truck without hesitation (don't be behind him) and get the turtle crossing the road to make his favorite turtle sauce piquant.
