For many years the fig has been used as a coffee substitute. The fruit contains a proteolytic enzyme that is considered an aid to digestion and is used by the pharmaceutical industry. And, because of its high alkalinity it has been mentioned as being beneficial to persons wishing to quit smoking. Dried figs were first sold in a commercially manufactured cookie in 1892.

This is a popular recipe request. This recipe is one of the classics and as with the old recipes, cooks use a lil of this and a lil of that. Between MawMaw and Bert, the beginning of the semblance of a recipe has been created. This recipe calls for an ingredient many Cajun cooks had and that was 'judgement'. Maw-Maw likes what Chef Folse says about grillades - Grillades may be found on the sharecropper's breakfast table or on the grand buffets of New Orleans.

A young lady, Jordan Raymer, asked if I had ever had Chocolate Gravy and Biscuits. That one got my attention. It may sound funny but I gaw-ron-tee it will get a big Yee-Haw!! from those who try it. If you are countin' calories, hon, you had better pass this one on by. It is de-licious!! You gotta give it a try.

This is a hand me down of Bert's Freezo famous Chili recipe. The drive-in Bert's Freezo which was located in Kaplan,LA had the best Chili dogs and Chili Frito Pie ever. The recipe was given to Tommy originally from Mr. Campbell's (late cook at the American Legion) son. He said Bert (Herman Bertrand) gave it to his dad.
