Recipe includes picture!  PawPaw's Catfish Courtbouillion ISarah Footit
In Lake Charles, La., there was a wonderful Cajun restaurant that served one of the best courtbouillions around. Sarah writes, "I also enjoyed PawPaw's Catfish Courtbouillion and didn't know if you guys had the original recipe? I visited PaWpAW'S in the early 90s and asked for the recipe and they gave it to me - ON LETTERHEAD!" This is that recipe. You will note that on our web site we have another PawPaw's Catfish Courtbouillion. Apparently PawPaw updated the recipe over the years and handed out that one as well.

Recipe includes picture!  Bert's Bread PuddingAlberta (Bert) LeBlanc
The makings of bread pudding is one dish that you can add or not add ingredients. For instance, you can not have any fruits such as pineapple or raisins. Or you can have one without the other. Nuts or No Nuts. Vanilla or other flavorings. Cinnamon or Not. Nutmeg or Not. The dish lends itself to its creator. Just like gumbo, the ingredients to be included or not are endless.
Recipe includes picture!  Couche Couche II (Cush Cush)Maw Maw Broussard
One of the more popular Cajun dishes, this version of couche couche is made with water. You must be careful though not to choke while eating this delightful dish. Anyone who has ever eaten couch couch more than several times has gotten a little down the wrong windpipe.
