| We made these each Christmas growing up in Louisiana. Even Maw-Maw remembers making these for her children at Christmas. |
| This is a great holiday fudge. My mother made this recipe when my sister and I were little. I think my dad ate most of it! Not yet rated |

| This recipe is a popular "bread" in almost every culture witht the Cajuns not being an exception. This recipe came in the same time that we had a recipe request for it. |
| A basic sweet dough for preparing tarts that can be filled with fig preserve, blackberries, bouille, coconut cream, pineapple, or sweet potato. The various recipes for the fillings can be found on our website. |
| Pralines (Praw-lins), sweet pecan candies, made for Cajun and Creole children. I loved it in the fall, the air had a special smell and the pecan would dance in the wind until they fell on the ground not far from our pot. Well actually sometimes we found a big stick and threw it into the branches so the pecans would fall to the ground. |
| MawMaw knows how to make points with her mother-in-law. She love to make her some pralines; they are really easy to make but don't tell her Mom-in-law...she thinks her daughter-in-law has slaved all day. These type pralines are exceptional. Not yet rated |
| When I was a little girl I remember an aunt would make candy with sesame seeds or some kind of seed and sryup or something like it....this is the recipe! The Cajun word for sesame is benne; the smell while they are roasting brings back wonderful childhood memories.

| I loved the days my Mm made jelly rolls. The words "jelly roll' is its own defintion. jellyroll - thin sheet of sponge cake spread with jelly and then rolled up to make a cylindrical cake. In looking at the recipe and I see the ingredient "double acting baking powder". Ever wonder what that meant? Baking powder which lightens or “leavens” many baked goods is “double acting.” Half its reaction is due to moistening the batter and causing the acidic agent to react with the alkaline agent. The other half occurs when the batter reaches a certain temperature. Not yet rated |

| Le kaki ou suit un régime le kaki - our recipe title in French. These were some of our favorites growing up - both the fruit and the cookie. The fruit was especially sweet if allowed to almost overripe. But they sure were tart and bitter if you did not wait until the fruit was fully ripened. I can still see them on the my Mom's windowsill ripening.
The color of the fruit varies from light yellow-orange to dark orange-red. The size can be as little as a few ounces to more than a pound. Ours were about the size of an orange. The entire fruit is edible except for the seed and calyx. Not yet rated |
