If you have lived, fish or hunted in South Louisiana, you know that seafood and wild game abound. Most Cajun children know how to catch shrimp by throwing a cast net while standing ankle deep in Rockefeller Refuge waters or the waters of Rutherford Beach. Because of its unique location, Rockefeller Wildlife Refuge near Cameron, Louisiana is one of the most important wildlife areas in the United States. Another method to catch seafood is to run a sane (a long and wide type of casting net) along the beaches ocean floor standing waist deep in the waters while patiently pulling in today's dinner, tomorrow's crab stew or part of this casserole.

Per the editor - Gold Brick Candy is very popular around Easter time; sometimes though all Gold Bricks candy sell out as I have often found out. If you can not locate any and you have an inkling for one, this recipe will satisfy your cravings and sweet tooth.

These nuts are wonderful for entertaining or just plain snacking. You can use any nuts such as pecans, walnuts or almonds. Blanching is also an effective method of loosening the skin on fruits or nuts that one may wish to peel, such as tomatoes, plums, peaches, or almonds. In addition, blanching enhances the color of some (particularly green) ingredients. Steam blanching is also used to neutralise bacteria and enzymes present in foods so that they may be processed and gain a greater shelf life, such as peanuts. Blanching can also describe deep frying in oil at a lower temperature as with the initial cooking of French fries.
