Eggs age more in one day at room temperature than they do in a week if refrigerated.
To make easy to peel hard boiled eggs, allow the fresh eggs to age for a couple of weeks in the refrigerator before boiling.
The average hen will lay about 245 eggs per year.

| This bouille is an old Cajun recipe from my mother-in-law. Mine never tastes quite as good as her for some reason! You can eat this warm by itself or use it a topper for sliced angel food cake or crumbled regular cake. You can top with chocolate syrup, cherries, etc. Not yet rated |

| This recipe was posted on Lou Ana Cooking Oil website. Maw Maw's Uncle Bill won the original art poster contest for the 100th birthday celebration of Lou Ana Oil. What is most interesting is that Uncle Bill had a crawfish mascot also named Alfonce. How interesting when things comes full circle. MawMaw halved the recipe and still made 20 beignets. | Did you know...Louisiana is the only state in the union that does not have counties. Its political subdivisions are called parishes. Why? Louisiana was officially Roman Catholic under both France and Spain's rule. The boundaries dividing the territories generally coincided with church parishes. In 1807, the territorial legislature officially adopted the ecclesiastical term. Through each change in her history, Louisiana never deviated and the primary civil divisions have been officially known as parishes ever since.
